Cilantro Chicken

Cilantro is easy to grow, and much easier to grow in your garden then remember to buy from the store and then remember to use it before it goes bad.  So I usually have some in my garden, and am always on the lookout for good recipes to make with it.  This is one of my favorites, and as usual, is very easy.

4 boneless, skinless chicken breasts
1 Tbsp. minced garlic
1 tsp. salt
1/2 tsp. pepper
1/4 cup chopped cilantro
1/4 cup olive oil
1/2 cup butter, melted
1/4 cup lemon/lime juice

Mix ingredients minus chicken. Place chicken in pan and pour sauce over top. Bake at 375 degrees for 30 minutes. Serve over rice.
