Beans, beans, beans
I’ve done the South Beach Diet a couple times over the last year trying to lose by “baby weight.” So I’m always on the lookout for good bean recipes (one of the things I really like about South Beach over Adkins - you can eat beans.) This is one of my favorite recipes, and my family likes it too.
Chicken Chili
1 Tbsp. olive oil
1 lb. chopped chicken
1/4 cup onion
1 cup chicken broth
4 oz. canned chilis
1 tsp. minced garlic
1 tsp. cumin
1/2 tsp. oregano
1/2 tsp. cilantro
1/4 tsp. red pepper
2-3 16 oz. cans beans (black, kidney, garbanzo, white)
Saute chicken and onion in olive oil. Add rest of ingredients and simmer for 30 minutes. Serve with sour cream and grated cheese if desired.
